One of the most interesting concepts in Melbourne's always-innovative cafe scene, Sensory Lab is a cross between a specialty espresso joint and a weird and wonderful science laboratory - hence the name. From the people behind St Ali, Sensory Lab creates a sensory experience to the last detail. The single-origin coffees here are displayed on a counter of heated filters, and that's where the coffee experts come in to help you choose your preferred pick. It's as much an educational experience as it is a moment of instant gustatory gratification.
But looking past the novelty, Sensory Lab also offers a small range of bites to complement your cuppa (or the other way round, but coffee is the real attraction here). You can choose from a BLT, chicken wrap, roast vegie roll or muffin, all designed to stimulate your senses.
