Fans of Maurice Esposito's Carlton digs will undoubtedly already know about his latest venture into the big smoke: a spacious bar and restaurant spruiking his passion for sustainable seafood.
Hidden in a secluded spot down Melbourne Lane, Saint Peter's shows no signs of its former life as the late-night swillhouse Canary Club. Gone are the booths and dingey atmosphere, and in their place are white-clothed tables, a marble bar and even a select few Catherine Pilgrim artworks adorning the walls.
As the name may have given away (St Pietro is the patron saint of fishermen), Esposito's latest menu preaches the ethos of sustainable seafood. With this in mind, the menu is constantly changing, but diners can expect to see flavours ranging from a clean-tasting carpaccio of yellowtail kingfish to the richness of an ocean trout confit with cauliflower dolcetto, all with Esposito's signature flourishes that bring the mundane into the sublime.
