On food alone this is an ambitious project; add in the prime location and opulent surrounds and this is shaping up as one of Brissie's very best. Esquire is the long-awaited return of Ryan Squires, the 2009 Courier-Mail Chef of the Year and Gourmet Traveller Best New Talent in 2010. Joining him in the kitchen is Ben Devlin, fresh from a stint at the world's best restaurant, Noma. Despite these impressive credentials the boys aren't resting on their laurels. Esquire is just about the most progressive dining concept to hit Brisbane in a number of years. There is no menu to speak of, instead diners can choose from a range of tasting menus that will showcase the freshest seasonal produce. In spite of these lofty dining ideals, it is Esquire's accessibility that gives it such universal appeal. In short, look for this one to be the restaurant opening of 2011.
