Since Denmark's Restaurant Noma was named the world's best restaurant there suddenly seemed to be countless imitators. However, this Nordic bistro was doing its thing long before Rene Redzepi knocked off Ferran Adria's El Bulli crown.
Housed, naturally, in Denmark House, Dansk manages to stay true to the principles of the manifesto for New Nordic cuisine (similar to the Reinheitsgebot, or German beer purity laws) without falling into the trap of being a Noma impersonator.
By day Dansk is a traditional Danish bistro, sporting mostly preserved dishes such as smoked eel and cured pork. By night, however, the bright and open space transforms into a much more modern interpretation of Scandinavian cuisine. Expect cold climate dishes that are both fresh and warming at once, accompanied ably by a wine list of matching European drops.
