Bistro 80


It's never easy stepping into a space vacated by a celebrity chef. No matter what style of food you're doing it will invariably be compared to that of your departed predecessor. Luckily, stepping into the space formerly known as Sean's Kitchen, Bistro 80's Paul Gaspa is more than up to the task.

He may not be a household name in the Sydney dining scene yet, but Gaspa is certainly no slouch. He has worked near and far, from the Michelin-starred Conrad Hotel in Tokyo to the Burj Al Arab in Dubai. Closer to home, those who dined at the Crown Casino's Breezes may recognise his signature modern Australian fare with its distinctly Gallic bent.

With this in mind, it's no surprise to find a classic menu in place at Bistro 80. A smart charcuterie selection brings an Iberian flavour to the fore before entrees like chicken liver parfait and mussels provencale bring it roaring back to classic French.

Mains start to see a bit more mod-Oz style creeping in, with a wagyu beef burger and a roasted Victorian lamb rack bookending the menu. Augmenting the standard mains are a sub-menu each for seafood and beef. This is where you'll reach the upper echelons of quality produce - and the prices to match. Expect to see wagyu steaks with 9+ marbling scores and oscietra caviar, both of mind-blowing expense and immaculate taste.
